In this stage, the egg bacteria in the raw materials are gradually killed, and with the accumulation of heat, when the temperature exceeds 70 ° C, the low-temperature microbial bacteria will die, the activity of the high-temperature bacteria will also be reduced, and the fermentation speed will be slowed down.
